There is this great blog I stumbled upon a while back that has videos of actual weddings. Great resource for design elements, color schemes, centerpiece ideas and themed weddings. Check it out:

I'd say use the colors of the tree's.

white, tans, olive greens, yellows

simple vases, glass milk bottles, or small metal pails filled with simple wild flowers; daisies, Queen Anne's lace, ect. Or how about small terra cotta pots with herbs planted in them...rosemary, mint, oregano, lavender. Think of how great that would smell.

(What would be REALLY awesome is some glass jars with lightning bugs on each table, or something to look like them.)

Do earth tone colors, green, tan, brown, burnt orange etc.I think you really need to think twice on the potluck dinner idea. People are already bringing presents to you, now your wanting food to feed your guest also. Wedding's are expensive there's no way around it. I had to wait a year after my engagement to have my wedding so we could save up for it. I had an extended relative that did a pot luck dinner and she was the talk of the family for a long time, its rude. These people are coming to your wedding to be with you on your special day, they're also buying you presents. The least you can do is offer some food.

How about green and yellow?
You could put daisies in mason jars with bright green ribbons tied around the jars, candles in white lanterns, or even jars full of lemons and limes as centerpieces.
And what a cheerful color combination! :)

If you want an earthy, hippie-type party, why don't you (instead of having specific colors) go for general earthtones? Greens, olives, tans, browns, rich deep reds, etc? Since it'll be spring and you'll be outdoors, you guys could all wear sandals, too (yay, comfortable shoes!).

As for decorating...have you considered growing your own flowers? Daisies, daffodils, whatever grows well that you can plant a lot of out there, mixed in with some greenery. Each table will probably look a little different, but it'll have its own vibe.
